Here's A Hot Topic - New Grills Installed In Picnic Areas

Do you love to grill? Then you will be excited about our latest update to Lexington Heights! Recently Gregor and Jay from the Condor staff installed new grills and we've heard nothing but wonderful things about the new grills from our residents. 

Check out the photos below of the guys working on the project. It looks like it took some effort - first they had to pull out the old grills and their cement bases and then pour new cement to place the new grills. They are constantly working to make Lexington Heights a great place to live and replacing the grills is just one of many projects that Jay and Gregor have done to keep our community well-maintained. We hope you get a chance to try out the new grills soon!

Charity, our Assistant Manager at Lexington Heights, suggests trying out our new grills with this delicious recipe, about which she says: "I LOVE!" and "YUMMY!" With that kind of endorsement you had better get cooking!

Grilled Garlic Chicken 

Ingredients
· 2 4-pound chickens, cut up
· 1 bunch scallions, minced
· 6 garlic cloves, peeled and finely chopped
· 2 cups orange juice
· 1/4 cup cider vinegar
· 2 teaspoons dried oregano
· 2 teaspoons kosher salt
· 1/2 teaspoon crushed red pepper flakes

Directions
1. Place the chicken pieces in 1 or 2 large resealable plastic bags and add the rest of the ingredients. Shake to mix. Refrigerate at least 1 hour or overnight.

2. Let the coals burn until they are lightly covered with ash. Cook the chicken skin-side up for 20 minutes. Turn and cook an additional 15 to 20 minutes or until the juices run clear when a thigh is pricked with a fork; it should register 180° F on an instant-read thermometer. Alternatively, roast the chicken uncovered in a preheated 400° F oven for 35 to 45 minutes.
